Pale yellow with natural golden highlights

In its first year its bouquet is sweet and warm with a fragrance of wild mustard flowers and vanilla; maturity reveals stronger scents such as wild mint, sage, thyme and resins

In the mouth it is dry but rounded, complex and persistent

Food Pairing: As an aperitif accompanied by tomato and basil bruschetta, fresh pecorino cheese or mozzarella, asparagus risotto, fettuccini with butter and sage, gnocchi "alla romana", spaghetti in a tuna or tomato sauce

What’s In It: Procanico 45%, Verdello 25%, Grechetto 20%, Rupeccio 10%

How It Was Made:

Vinification Soft pressing, preventive static decantation of the musts. Fermentation in steel

Harvest Grapes are harvested and selected by hand. Grechetto is harvested in the first half of

September, Procanico in the first half of October

Aging In steel for 6 months, with contact with fine lees

Aging potential Beyond 15 years
