What’s In It: 60% Corvina, 10% Corvinone, 20% Rondinella, 10% Croatina

How It Was Made:

The grapes are harvested by hand and transported as soon as possible to wine cellars; they are then selected and pressed and destemmed. The fermentation takes place in stainless steel vats and includes the processes of fulling, reassembly and delestage. After the malolactic fermentation the wine is transferred to wooden barrels of various types capacities. The regular decantation, the processing in the cellars and the assembly during the 18 months of maturing produce a well-balanced and rounded wine. The type of filtration and the care in bottling ensure that the wine maintains all its characteristics which are accentuated during the 6-month period when the bottled wine is stored in temperature-controlled warehouses.
