How It Was Made:
Fermentation: The wine undergoes fermentation in custom-designed vertical fermenters, with gentle punch-downs and pump-overs. Maceration periods vary from 27 to 57 days, with some batches undergoing submerged-cap maceration.
Aging: After fermentation, the wine is aged for 26 months in large Slavonian oak casks of 40, 50, and 75 hectoliters.
