“Benedete” is a name that is intended to recall the centuries-old history of Ribolla. This ancient variety originated in the hills of Eastern Friuli, where historically it was cultivated by the Benedictine Friars of the Abbey of Rosazzo, who then promoted its spread in the Colli Orientali, Collio and Brda (Slovenian Collio) zones. The must of late-picked grapes, after maceration on the skins for 6 hours at 13°C, is fermented and matures in stainless steel.

How It Was Made:
The grapes are harvested in the second half of September
and left to macerate at 13 °C for 6 hours.
Fermentation in stainless steel at a controlled temperature
of 15 °C for about 15 days.
Maturation, again in steel, continues until the following spring.
