This is the first wine from Olivier Bonville's (of Champagne Franck Bonville fame) joint negotiant effort with his wife, Delphine Cazals. It is named after their daughter, Camille, and is 100% grand cru Chardonnay from vineyards in Avize.
Profile:
Green apple, Brioche, Toast, Plum.
Eyes: Straw yellow with a little tinge of green
Nose: Rich fruity nose with floral notes
Palate: Clean, fruity and refreshing with prominent flavours of green apple combined with brioche, toast and cream
Finish: Dry, crisp medium finish with good minerality
Body: Medium
Acidity: Medium
Dryness: Dry
Food Pairing: Pork, Shellfish, Rich fish (salmon, tuna, etc), Mild and soft cheese
What’s In It: 100% Chardonnay.
How It Was Made:
The grapes chosen for the wines of Champagne Camille Bonville are harvested and pressed by us, at the family press. They come from the terroir of Avize in its richness and diversity. The musts are vinified by Olivier Bonville in the heart of the village of Avize.
All the wines go through malolactic fermentation, and apart from the barrel-aged Belles Voyes cuvee, all are made in stainless steel.
