Ripe but bright cherry, plum and red currant lead on this high-toned and appealing Cab. The fruit is backed by scrubby Aussie bush characters like wild sage, myrtle and dusty earth. Medium weight with lifted acidity, the mouthfeel is slippery in texture with well-structured, savory tannins.

How It Was Made:
The fruit for the Stonehorse Cabernet Sauvignon is sourced from our estate vineyards in the Polish Hill & Watervale sub regions of the Clare Valley. The vine age is from the mid 80s. The fruit is machine harvested in the early morning, then crushed and destemmed. Fermentation takes 7 to 9 days and then pressed to tank and let rest for a few days. Half is then put into 2- and 3-year-old barrels, with the remaining balance staying in tank.. A wine to enjoy in its youth, however, it will happily live for a further 10 years.
