Profile:
Aroma: The nose is vibrant and complex, with aromas of ripe apples, white peaches, and lemon curd. Subtle notes of almond, honey, and fresh herbs add depth and richness.
Palate: On the palate, the wine is fresh and mineral-driven, with a fine, silky mousse. Flavors of preserved citrus, stone fruits (like peach and apricot), and a chalky finish create a clean, crisp, and long-lasting impression.
Food Pairing: Ideal with seafood, shellfish, sushi, soft cheeses, and light charcuterie
What’s In It: Chardonnay 79.5%, Pinot Bianco 1.5%, Pinot Nero 19%.
How It Was Made:
Vineyard Care: Hand-harvested grapes from 240+ certified organic vineyards. Each bunch is carefully selected for quality.
Berry Spa: Grapes undergo an exclusive “whirlpool-like” wash process in three soaking tanks, followed by thorough drying in a special tunnel.
Pressing & Fermentation: Grapes are pressed in an oxygen-free environment. The base wines ferment in stainless steel tanks at controlled temperatures for 7 months.
Blending: Wines are blended following the Ca’ del Bosco Method to create the cuvée. The wine is aged on lees for at least 25 months to develop complexity.
Disgorgement: The wine undergoes oxygen-free disgorgement using a patented process, preventing oxidation and eliminating the need for added sulfites.
Tirage & Maturation: The wine undergoes tirage (bottling with yeast) from April to June after the harvest, followed by an average maturation sur lies of 25 months.
