Profile:
Appearance: Clear ruby with medium depth and a hint of garnet at the rim
Aroma: Bright red cherry, dried herbs, and a touch of volcanic earth
Palate: Lively acidity, fine-grained tannins, and fresh red berry fruit with a mineral backbone
Finish: Long, savory, and stony with a lift of tart cherry.
Food Pairing: Pairs well with grilled lamb, mushroom risotto, roast duck, tomato-based pasta, or aged pecorino.
What’s In It: 90% Nerello Mascalese, with a small percentages of local red varieties.
How It Was Made:
Vineyard: Sourced from the single-site Pirrera contrada (vineyard area) on the north face of Mount Etna. The vineyard sits at 850 meters above sea level and features volcanic, rocky, and sandy soils. The vines are over 50 years old and are farmed biodynamically.
Vinification: Grapes are hand-harvested and fermented with native yeasts in cement tanks. The wine undergoes 15 days of skin maceration.
Aging: The wine is refined for 16 months in a large, 750-liter Slavonian oak foudre.
