It is the exception that proves the rule. This is the only cuvee of all our range where our Chardonnays meet another grape variety. We have selected Pinot Noirs from the Montagne de Reims on Ambonnay’s terroir for the elegance and the finesse of these red coteaux. Olivier Bonville was able to trade with Ambonnay celebrity-producer Paul Dethune for the red wine that goes into this blend.
We make the Chardonnay keynote vibrate with this touch of Pinot Noir. This delicate alliance reveals a unique aromatic palette. The very fruity scents of wild strawberries bring volume to the tasting. Then, the Chardonnay progressively sets the tone with pastry shades that we know well at the House Bonville.
Profile:
Eyes: Deep pink with salmon glints.
Nose: Heavy on the nose with hints of vanilla and raspberry.
Palate: Soft, creamy mousse with mild flavours of steeped raspberry, ground anise, graphite and smoke.
Finish: Well-balanced with a pleasant finish.
Dryness: Dry
Food Pairing: Pork, Shellfish, Rich fish (salmon, tuna, etc), Mild and soft cheese
What’s In It: 90% Chardonnay, 10% Pinot Noir (Montagne de Reims).
How It Was Made:
Terroirs: Avize Grand Cru, Ambonnay Grand Cru. All the wines go through malolactic fermentation, and apart from the barrel-aged Belles Voyes cuvée, all are made in stainless steel.
