Profile:

Dry, medium-plus-bodied with ripe dark berry, plum, cherry, cinnamon, clove, smoky vanilla and toasty oak flavours on the palate.

Eyes: Deep, dark ruby red

Nose: Cherry, plus and blackberry supported with hints of oaky and earthy tones of cedar and vanilla<br>Palate: Full bodied with smooth, balanced tannins and acidity

Finish: Long, elegant mouthfeel with an enjoyable aftertaste

Food Pairing: Peppered red meats, entrecote steak, game, wild duck or lamb. Ideal with mature cheese.

What’s In It: Merlot 76%, Cabernet Sauvignon 22%, 1% Cabernet Franc and 1% Malbec

How It Was Made:

Soil: Calcareous clay

Farming: No tilling (let the grass compete with vines to push roots deeper and to avoid harming small animals).

Harvesting: Machine

Winemaking: Ferment at a low temperature, below 25 degrees C. They raise the temperature to 28 degrees for two days right at the end of the fermentation to give the wines a good tannin structure.

Barrels: French oak, coming from three different coopers and three different degrees of toasting.

“Two-third of Merlot, one-third of Cabernet Sauvigon and a tiny portion of Malbec in this 18-month oak aged cuvée. Once aerated, it shows fine aromas of ripe red and black fruits well combined with a delicate and spicy oaky aroma. Palate is rich and dense, well balanced by its acidity and supported by fine and silky tannins. Marriage of force and elegance.
