VITICULTURE / VINIFICATION

• 75% whole-cluster, 25% de-stemmed, fermentation in stainless steel

• 2021 vintage is 30% whole-cluster fermentation due to the later harvest date

• Aged for 12 months in 500L demi-muids, 5% of which are new

• L’Instinct refers to the “instinct” required and the intuition needed for a vigneron to adapt to each vintage.
