Eyes: Deep, dark ruby red

Nose: Heavy on the nose with hints of vanilla and raspberry

Palate: Medium to full bodied with medium tannins, high acidity. Hints of black fruits, liquorice, oak, vanilla and tobacco.

Finish: Soft, well balanced with a long and pleasant finish.

Body: Full

Acidity: Medium

Tannin: Medium +

Dryness: Dry

Food Pairing: Peppered red meats, entrecote steak, game, wild duck or lamb. Ideal with mature cheese.

What’s In It: Merlot 62%, Cabernet Sauvignon 34%, and Malbec 4%

How It Was Made:

Soil: Calcareous clay

Farming: No tilling (let the grass compete with vines to push roots deeper and to avoid harming small animals).

Harvesting: Machine

Winemaking: Ferment at a low temperature, below 25 degrees C. They raise the temperature to 28 degrees for two days right at the end of the fermentation to give the wines a good tannin structure.

Barrels: French oak, coming from three different coopers and three different degrees of toasting.

"Two-thirds Merlot, one-third Cabernet Sauvignon, and a touch of Malbec make up this 18-month oak-aged cuvee. Once aerated, it reveals elegant aromas of ripe red and black fruits, delicately balanced with spicy oak notes. The palate is rich and dense, with balanced acidity and fine, silky tannins.
