Profile:

Color: An intense, dark, purple-black color.

Nose: The bouquet offers notes of ripe, crushed black plums, and fresh blackberries. It also has hints of tilled earth, pencil lead, licorice, charcoal, and bay leaves.

Palate: On the palate, this is a full-bodied wine with a mouth-coating texture and plush, ripe black fruits. Plush tannins provide a soft texture, balanced by ample freshness and balanced acidity.

Finish: The finish is long and earthy, with elegant and fine tannins.

Food Pairing: Pairs well with grilled meats, roasted lamb, duck, hard cheeses (like aged Gouda or Comté), and dishes with rich sauces such as beef Wellington or mushroom risotto.

What’s In It: 68% Merlot, 19% Cabernet Sauvignon, 8% Cabernet Franc, 5% Petit Verdot

How It Was Made:

Vinification: Grapes are harvested by hand after reaching optimal ripeness. Fermentation takes place in stainless steel vats.

Aging: Aged for 12 months in French oak barrels. 30% of the barrels are new oak, while the remaining 70% are one-year-old.
