Appearance: Crystal-clear with a subtle satin sheen—hallmark traits of high polishing and careful handling.

Aroma: Elegant notes of candied melon, fresh apple, and jasmine petals, with a whispered hint of citrus peel. Rich and floral with refined intensity.

Palate: Plush, soft-textured, and wonderfully clean. Offers a round, almost creamy mouthfeel amid vivid layers of fruit and florals.

Finish: Delicately persistent—lingering echoes of melon and citrus peel as the sake softly fades.

How It Was Made:

Rice Polishing: Polished down to 35%, placing it well within the daiginjo grade.

Brewing: Crafted using traditional, low-temperature fermentation methods with premium Yamadanishiki rice and high-quality water sourced from Gifu.

Toji (Master Brewer): Overseen by Asaka Watanabe—one of Japan’s rare female toji—who continues her family's century-old brewing techniques.

Batch Style: Shizuku (drip-pressed) style—meaning no mechanical press is used, allowing for a gentle, gravity-based extraction of the sake's purest flavors.
