What’s In It: 85% Glera, 15% Pinot Noir
How It Was Made:
The grapes are harvested around the first week of September, softly pressed and left to ferment at a controlled temperature. After the red vinification of the Pinot Noir, it is combined with the Glera to continue with the secondary fermentation in an autoclave.
