How It Was Made:
Harvesting and Vinification
Harvesting is by hand, with bunch selection, destemming and sorting of the
berries. The grapes thus selected undergo pre-fermentation maceration
cold for about 48 hours. Temperature-controlled fermentation follows,
partly in stainless steel tanks and partly in wooden vats, resulting in
maceration on the skins for 10-15 days. Malolactic fermentation, which
takes place in oak barrels, is followed by a maturation period of about 18-22 months
in wood by performing bâtonnage. It remains in bottle for aging at least 18
months.
