Finish: Harmonious, with a gentle sweetness and lingering notes of dried fruit and spice.
Food Pairing: Pairs well with almond cookies, aged Pecorino, roasted nuts, and rich fruit desserts like tarts and panforte.
What’s In It: 50% Malvasia, 50% Trebbiano
How It Was Made:
Grapes (typically Malvasia and Trebbiano) are handpicked about 15 days before full ripening, then dried (“appassimento”) on straw mats to concentrate sugars. After about three months of drying, they are pressed and fermented, then aged for approximately three years in small oak barrels (known as caratelli del Chianti) during which the wine rests on its lees (“madre”).
