What’s In It: 100% Chardonnay, mostly from Avize (some Oger and Le Mesnil-sur-Oger)
How It Was Made:
Slow, complete fermentations in temperature-controlled stainless steel vats bring out the full aromatic potential of the grapes. This is followed by 5 years of prolonged aging on the lees in the cellar and, after disgorgement, a dosage of 2.5 g/L. All the wines go through malolactic fermentation, and apart from the barrel-aged Belles Voyes cuvée, all are made in stainless steel.
