The wine is an intense red

Ample, persistent bouquet, with notes which range from small red fruits to spices

Soft velvety wine, maintains its easy drinking characteristic typical of Valpolicella wine but intense fruity flavours and a delicate note of chocolate

Food Pairing: Robust first courses such as mushroom risotto. Ideal with meat based dishes such as mixed grills, roasts and game. Excellent also with cold cuts and medium matured cheeses

What’s In It: 60% Corvina, 10% Corvinone, 20% Rondinella, 10% Croatina

How It Was Made:

The grapes, carefully selected in the vineyard during the harvest, are vinified with delicate crushing and destemming.

This is followed by fermentation at a controlled temperature for 8-10 days.

Once completed, the new wine is stored in steel tanks and then “repassed” on the marc of the Amarone.

This is precisely the true characteristic of this wine: the “repassing” of the wine on the marc of the Amarone just pressed which induces a second fermentation.

Thanks to this step, the wine acquires greater softness, extreme longevity and structure.

After racking, the malolactic fermentation is encouraged.

Finally, the wine ages for about 36 months in medium and large barrels.

After bottling, the wine rests further for at least 6 months in temperature-controlled environments.
