How It Was Made:

Pinas are steam-cooked in autoclaves, then the juice is extracted via roller mill and fermented in stainless steel tanks.

The spirit is double-distilled using a blend of pot still and column still distillation to balance earthy and fruity expressions.

It is aged for at least 2 months (commonly up to 6 months) in #2 char American oak barrels.

Bottled without additives—no chill-filtration or coloring.
