What’s In It: Sangiovese, Cabernet Sauvignon, Cabernet Franc

How It Was Made:

Cold maceration on the skins for the sangiovese for several days, followed by fermentation with natural yeasts in temperature-controlled cement tanks along with the cabernet grapes. Long maceration on the skins. Malolactic fermentation carried out. Aged in cement tanks until late summer, bottled after light filtration and left to rest in bottle for another few months.

Lillybeth is made using a natural winemaking method

that incorporates the style of wines from the south of

France such as Beaujolais Village or Mâcon. It comes

from the joint vinification of Sangiovese grapes,

Cabernet Franc and Cabernet Sauvignon.

soil: medium-textured clay-loam with 3 - 4% sand.

harvest: 20 August/10 September, manual with

selection in the vineyard.

vinification: the Sangiovese undergoes cold maceration on

the skins alone, and is then joined by the Cabernets for

fermentation with indigenous yeasts. Aging takes place

in cement tanks.
