How It Was Made:
The grapes are hand-harvested from the Clos des Varoilles vineyard, ensuring quality and selection. They undergo a traditional vinification process, which includes sorting, destemming, and gentle crushing. Fermentation occurs with native yeasts in temperature-controlled vats, allowing for a natural expression of the terroir. The wine is then aged in French oak barrels (with a portion of new oak) for around 12 to 15 months to enhance complexity and integrate flavors while maintaining the elegance of the Pinot Noir. Minimal filtration is used before bottling.
