Profile:

Nose: Earthy peat smoke, barley husks, farmyard, nori, smoked chili, forest floor—with barley sugar sweetness, citrus zest, honey porridge, milk chocolate.

Palate: Medium-thick, rich; sweet peat evolving into creamy butterscotch, caramel, brown sugar, molasses, black pepper, dried cherry, clove and phenols.

Finish: Long & warming—bonfire embers, chewy dates, eucalyptus, menthol, salt, charred driftwood, lime oil.

Food Pairing: Pairs excellently with smoked meats, grilled seafood, mature cheddar, or dark chocolate for a bold tasting journey.

How It Was Made:

Local Malt & Malting: Barley harvested in 2012 from Islay farms, traditionally malted with peat smoke in kilns.

Distillation: Double-distilled in Victorian pot stills at Bruichladdich Distillery.

Maturation: Aged mainly in American ex-whiskey barrels (75%), with approximately 25% finished in first-fill Pessac-Léognan French wine casks.
