Profile:

Appearance: Bright and clear with bluish-silver sparkles.

Aroma: Cooked agave, clean smoke, citrus, dried tropical fruit, herbal earthiness, and a hint of barnyard funk.

Palate: Bold and fruity—mango, papaya, pineapple, citrus, and green pepper, layered with saline leather, salted caramel, nutmeg, capers, and pink pepper.

Finish: Medium-bodied and warming, with lingering herbal spice and subtle smoky complexity.

Food Pairing: Pairs beautifully with grilled seafood, citrusy ceviche, and smoky cheeses

What’s In It: 53% Cupreata (papalote), 35% Espadín (Agave angustifolia)

How It Was Made:

Agave Cooking: Roasted for 5–7 days in underground brick-and-stone pits using encino and tepeguaje wood.

Milling & Fermentation: Mechanically crushed, then wild-fermented in open pine vats for 7–10 days.

Distillation: Double-distilled in copper stills over direct fire.

Sustainability: Uses only cultivated agaves—no wild harvesting.
